The idea for Haggis Pizza came about while staring at some leftover haggis and wondering what to make for tea for the two starving monsters who are our children.

It wasn’t a particularly ingenious or unique concept. Still, we hadn’t made a Haggis Pizza, and it started the ball rolling on what would be the perfect toppings to accompany the haggis on this Italian classic.

So here we share our two family Haggis Pizza recipes.

The first is the one our boys loved, the Haggis Meat Feast—not an original title, we’re afraid. This went down a storm, and the different toppings worked perfectly together. We’re sharing this one as it is oh so simple, perfect for the kids and a great introduction to haggis pizza.

The second is more refined and adult—a Haggis Pizza with a creamy whisky sauce. We’ve swapped out the tomato sauce for our delicious whisky pizza sauce, which is the perfect support for the haggis.

Why add Haggis to a pizza?

Haggis has a beautiful, unique, peppery flavour. For all the “Meat Feast” lovers who aim to put as much meat on a slice of pizza as possible, haggis is the ingredient they’ve been missing.

Haggis Pizza only requires a little haggis to give it that wonderfully peppery taste, so it’s a great use of any leftover haggis. What cheese works best for Haggis Pizza?

Despite haggis unsurprisingly being the star of the show of a Haggis Pizza, and rightly so, you can’t skimp on the other essentials when making one. That being said, we want this recipe to be as simple and easy to make as possible using ingredients you can easily buy.

We always use mozzarella cheese; it melts perfectly and adds a glorious taste and texture to any pizza. We tried it with just a standard cheddar, and it was tasty but a little bit too much like a toastie!

What base to use for Haggis Pizza?

The best base for a Haggis Pizza is the one you like to eat the most. If you like store-bought pizza bases, then these are perfect. If you want to make the dough from scratch and create the ideal sourdough thin-crust base, go for it!

In a house with small children, we must admit that store-bought bases hold a particular place in our hearts because of the speed with which we can put together a tea with minimal fuss.

What toppings go well on a haggis pizza?

Haggis Pizzas must do one thing: highlight and showcase the haggis and its flavour. If it’s buried in a wealth of different toppings, the flavour will be lost, and the pizza will become pointless. Keep the toppings simple and let the haggis take the lead role.

We suggest, amongst others, onion, cherry tomatoes, cured meats, thinly sliced potatoes, bacon and rocket.

What sauce works best with Haggis Pizza

A classic tomato sauce works very well to balance the taste of the haggis, but we’ve also tried something a little different.

Below, you will find the recipe for our tomato-based Haggis Meat Feast, plus our very own Haggis Pizza with a creamy whisky sauce. We couldn’t decide which to share with you; they have both been tried and tested and are well-loved in our house.

Pick your Pizza Base

As we said, make or buy your preferred pizza base. We can’t tell you what works best for you, but many recipes are available for the type you enjoy the most. We use the pre-made bases, especially for ease with children. They do the job and are quick and easy.

The Haggis Meat Feast Pizza

The Haggis Meat Feast does exactly what it says on the tin: a pizza with an abundance of meat and very little else. If you usually order these, then this is the topping for you!

Ingredients for a Haggis Meat Feast Pizza

  • 5 tbsp passata or your favourite pizza sauce
  • 100g mozzarella
  • 50g bacon lardons
  • 50g pepperoni/salami
  • 100g Haggis

How to make Haggis Meat Feast Pizza – Step-by-step method

Spread the pizza sauce liberally over the base, using the back of a spoon to move it around so as not to damage the base.

Add the pepperoni/salami, spacing it around the pizza so each slice has a slice or two.

Add the bacon lardons liberally over the pizza, again trying to ensure they are evenly spread. The idea is to make sure each slice has a little of each topping.

Crumble the Haggis evenly over the top; as the key ingredient, it should be on the top so you can clearly see it.

Tear small chunks off your mozzarella ball and spread it over the top, again trying to make sure each slice has some cheese on it.

Bake for the required amount of time for the pizza base you’re using, making sure the toppings are piping hot.

Slice and serve. These days, we use small slices because they’re easier for the boys to eat, but if it’s just for us, big slices with a lot of each of the toppings are the way to go!

Things you’ll need to make Haggis pizza with Whisky sauce

White Sauce:

  • 150ml double cream
  • 3 tbsp whisky
  • 1 tsp Dijon mustard
  • 1 tbsp butter
  • Salt and pepper to taste

Toppings:

  • 1/4 red onion
  • 100g Haggis
  • 100g mozzarella
  • 4 rashers of streaky bacon

Creamy Whisky Pizza Sauce:

This sauce is modelled on our Creamy whisky sauce recipe, which has proven to be one of the most popular on the site. We’ve adapted it to work well on a pizza base, but the flavours are the same.

Method for Creamy Whisky Pizza Sauce:

Heat a saucepan to a medium heat

Melt butter slowly in the preheated pan. Be careful not to burn it, as this will ruin the sauce’s taste.

Add whisky and allow the alcohol to burn off a little, but be careful not to let it boil.

Add cream and Dijon mustard to the pan and keep stirring until the mixture thickens. This is crucial because it has to stick perfectly to the pizza base. Trust us, you do not want it too runny!

Season with salt and pepper to taste. We like a lot of seasoning here at Scottish Scran, but remember the tastes and flavours you’ll be adding with the toppings. Haggis can be very peppery so you may want to go a little easier on the pepper, bacon is very salty, etc etc.

Allow to cool a little at least before using

Method for Haggis Pizza with Whisky Sauce:

Spread the whisky sauce liberally over your pizza base, saving some for drizzling on top

Add the bacon, as before, making sure each slice will have a little bacon on each slice. We pre-cook the bacon to make sure it’s cooked properly if you’re using a pre-made pizza base and will have a short cooking time, or put it on raw if the pizza will be cooking for longer in the oven.

Crumble the uncooked Haggis over the base evenly; a thin layer will have enough time to cook in the oven, but if you’re in any doubt, precook the haggis following the instructions given by the haggis manufacturer.

Add slivers of red onion, this adds a bit of balance to the sauce and haggis flavours. Using a creamy sauce can leave the flavour a little too rich for some; if this is the case, add some roasted cherry tomatoes cut in half as a topping. This adds a certain amount of bitterness to balance the rich taste.

Top with torn chunks of mozzarella evenly placed so each slice will once again.

Bake for the required time to cook the base and top ingredients, with the Haggis piping hot.

Drizzle the remaining sauce over the top. If the sauce has thickened significantly, you may need to reheat it.

Slice and serve

Here are two ways to make the best haggis pizza, perfect for all the family! The first is a meat feast of a pizza. The second is a little more refined with a gloriously rich creamy whisky sauce with a wee kick.

We used a 12-inch premade base for speed and ease, but you can prepare any base you love and follow the instructions below.

Ingredients

Haggis Meat Feast Pizza - Sauce and Toppings

  • 100g mozzarella
  • 50g bacon lardons
  • 50g pepperoni/salami
  • 100g haggis
  • 1/4 red onion - thinly sliced
  • 5 Tbsp Passata or your favourite pizza sauce

Haggis and Whisky Sauce Pizza - Whisky Sauce

  • 150ml double cream
  • 3 tbsp whisky
  • 1 tsp Dijon mustard
  • 1 tbsp butter
  • Salt and pepper to taste

Haggis and Whisky Sauce Pizza - Toppings

  • 100g haggis
  • 100g mozzarella
  • 4 rashers of streaky bacon
  • 1/4 red onion - thinly sliced

Instructions

Haggis Meat Feast Pizza

Pizza Method -

  1. Spread the passata or pizza sauce of choice liberally over the pizza base.
  2. Add the pepperoni/salami.
  3. Add the bacon lardons.
  4. Crumble the haggis evenly over the top.
  5. Spread mozzarella over the top.
  6. Bake for the required amount of time for the pizza base you’re using.
  7. Slice and serve

Haggis and Whisky Sauce Pizza Method -

Method for Sauce:

  1. Heat a saucepan to a medium heat.

  4. Add slivers of red onion.
  5. Top with mozzarella.
  6. Bake for the required time to cook the base and top ingredients, with the haggis piping hot.
  7. Drizzle the remaining sauce over the top. If the sauce has thickened significantly, you may need to reheat it. 
  8. Slice and serve

Notes

The different cooking times for the various different bases available will mean topping cooking times will vary.

For example, if using a premade base, cooking times are less, so haggis and bacon may need to be cooked before the pizza is put in the oven.
